Abstract

Evaluation of Meals Presented. to the Student by Alexandria University Dorms. The study was carried in 1975 to evaluate the meals presented by the Uniyersity dorms to the students, to know the students attitudes towards these meals, and to determine the food consumption and food waste. The total number of students living at the Alex­andria University dorms were 6000 students out of which 3700 were males and 2300 were females. The sample included this study represented 10 of the student population (600) and was selected by a sys­ timatic random method. Accordingly ’70 males and 230 females students were included. Each student was inter­ viewed to study his openion of the feeding services provided by the University. A subsample was selected to cover 50 of the in­terviewed students. There included 185 male and 125 female students. The food consumption and food waste determined for each of the students included in the subsample. After completion of the servey, the data of the nutritional study were processed and analysed manually to determine the daily intake of every subject in terms of food items and dietary ~utrients. The food composition tables of. nutrition I:!.stitute (Cairo, U.R.E.) were used for computation of the nutritive value of the daily diet. Results:­ . ­ ­ The results showed that the diet provided by the University meals exceeded the recommended dietary allowance for the age of the students while the per­cent left over-food was 7 for male and 25for fem­ ale students. The resulisshowed that the prescribed diet ex­ ceeded the R.D.A.s for calories and proteins. It was found that such diet did not pay any att­ention to the differences in the requirements between male and female students which would cost the University more to pay for the additional unrequired calories for female students, and the intake of the extra amount of food may lead to the development of obesity among fem­ ale studetnts. The results showed that if the students feel the food provided under sanitary condition, their appetite will increase. The students complain from SOl1’0 v8..’d.tj.es of pre­ sented food like cheese,. uncooked potl:;;x-ya1idrice. The results showed that there are some workers did not behave towards the students because of their exhausion at work. It was found that the feeding enviroment under the standers leveles for feeding the students. t The results showed that the students attitudes towards University meals was bad. The results showed that the left-over food of female students was higher than the left-over food of male students. The price of left-over food of male students was computed. It was 25,663 L.E. and for fem­ale students was 54,464 L.E. The total price was 80,127 L.E. every year. The University can make use of this wasteful money for improving the diet of the students and in developing Kitchens and resturants. The University must pay more attention to these losses, because the price of food items are increas­ ing year after year in addition to the increasing number of students, would increa8e the size of wasted foods and resources. The investigator put some recommendation to im­prove the student feeding.
