Abstract

Seven derivatives form sucrose were prepared by substituting two hydroxyl groups on sucrose moiety. by two or more of halogen atoms (Chlorine or bromine). Identification of the modified compounds was performed using the following analyses 1. Measurement of melting points. 2.Measurement of optical rotation. 3. Identification using lH-NMR, MS, HPLC and JR. 4.Determination of carbon, hydrogen, oxygen and halogen concentrations. 5.Determination of hydroxyl group 6. HPLC analysis 7. Thin-Layer chromatography analysis (TLC) 8. Infrared 9. Mass spectroscopy. Moreover, many physical properties of these derivatives including: Viscosity, Refractive index, Surface tension, Solubility, Stability under Microwave and Ultrasonic condition. Sweetness and caloric energy were estimated. Chlorinated sucrose products (4,1’ .6’- trichlorogalac to sucrose, 4,6,1 ’.6’-tetra-chlorogalactosucrose and 4,4’,1 ’,6’-tetrachlorogalactosucrose) were administered to Albino rats at different levels (0.05, 0.1, 0.2~ 0.01, 0.05. 0.1 and 0.005.0.01 and 0.02% respectively diet), for 2 months. blood samples were withdrawn at different intervals during feeding to follow the changes in the biochemical indicators. At the end of the experiment, the rats were killed, and body weight gain and organs weights were recorded.
