Abstract

The aim of the first part of this study is to give detailed information concerning the composition and localization of the esterase and lipase systems of lactobaciili from the streptobacterium and betabacterium groups. The second part of this thesis is devoted to study the possibilities of immobilizing the estrase system of l. Casei cnrz 62 to determine the influence of the immobilization on the properties of the enzymatic system. Entrappment of the esterase system in liposomes and their addition to cheddar cheese curd for accelerating the ripening process is also carried out. Material and method used are described in detail. Results obtained and their discussion are elucidated .
