Abstract Fenugreek, Trigonella foenum-graecum L. is a herbaceous, annual plant belonging to family leguminosae, subfamily papilionidae. Fenugreek is mainly a medicinal plant. It is used as an emollient for chest, throat, relieve cough and chest complaints. The oil possessed a lactation promoting factor which was reported to be squalene. In the present investigation the seed used what ever it is, new and stored to extract oil and oil was stored with antioxidant and without antioxidant. The oil content ranged from 7.38 in the stored seed to 7.73% in new seeds ones. The most prodigious phenomena obtained from the present study is that the amount of oil has not been effected in the two types of seeds new or stored (Table 2). In this study the storage of seed and oil increased the refractive index, acid number and peroxide value and the iodine number decreased during storage, as represented in Table 3,4 and 5). The increase in the acidity with a change in the saponification value may refer the hydrolysis as a source of increasing the acidity. Acid value increased from 13.15 to 14.84 in case of new and stored seed and from 13.286 to 31.492 of stored oil with antioxidant and stored oil without BHT respectively. |
