Abstract This investigation was carried out at second Belkas farm, city of Belkas, Dakahlia Governorate, Egypt. It was sown on during summer season on 13/5/2003 to try how to increase the production of sugars by studying the effect of different three rates of nitrogen fertilizer with harvest time of ripening stages to produce the best quality of yield & juice uses in making syrup from Sweet sorghum [Sorghum bicolor (L.) Moench variety Brandes]. Used a natural sweetener, which can be extract from Stevia leaves and sweet sorghum syrup in making jam or biscuit by exchange sucrose. It was studied the growth characteristics, yield and yield components, physical properties, chemical analysis of juice, syrup and grains, and sensory evaluation for the studied syrup produced from sweet sorghum, jam and biscuit which making from Sorgo syrup as nutritive natural sweetener & 5% Stevia solution extract as nonnutritive natural sweetener. |
