Abstract Food can be considered as functional if it beneficially affects one or more target functions in the body. Functional food ingredients include probiotics, prebiotics, vitamins and minerals. Probiotics include many different species, especially species of the genera Lactobacillus and Bifidobacterium. Lactobacilli are gram - positive, non spore-forming rods or coccobacilli. A commonly used probiotic bacterium is L. acidophilus.
