Abstract

In this study, 100 milk and dairy products samples were collected randomly from different markets and street vendors of Cairo and Giza governorates. Bacillus cereus was detected in 28% of investigated samples in which 40% of pasteurized milk, 20% of ultra heat treated (UHT) milk, 30% of white cheese, 20% of karessh cheese, 20% of low salt cheese, 80% of Damietta cheese, 0% of creamy cheese and 20 % of baladi yoghurt samples were positive for isolation of Bacillus cereus. The 28 Bacillus cereus isolates were identified using conventional PCR and all isolates had an amplified fragment at 1498 bp specific for Bacillus cereus. 28.6% of isolates showed positive amplification for 1271 bp fragment specific for ces gene, 25% showed positive amplification for 1091 bp fragment specific for hbl gene and 57.14% showed positive amplification for 421 bp fragment specific for cytk gene. The findings suggest that contaminated milk and dairy products with Bacillus cereus are sold to consumers and exposing them to food borne hazards
