Abstract

A total of 100 random samples of minced beef were obtained from butcher shops and markets in Egypt’s governorates of EL-Gharbia and Kafr-El-Sheikh.
The purpose of this study was to assess the microbial quality of minced meat in common butcher shops and markets. So, the samples were subjected to microbial examination for determination of mesophilic aerobic count, then serology for identification of S.aureus and E.coli isolates, in addition to using RPLA technique for detection of staphylococcal enterotoxins A,B,C and D .Also rapid diagnostic E.coli antisera sets used for detection the enteropathogenic type . As well as chemical evaluation to samples and measured (PH,TVN and TBA).
