Abstract

This study focused on the ultrasound{u2013}assisted extraction of polyphenols from the skins of roasted peanut and sesame seed coat as waste products of peanut kernelandsesameseedprocessingbesidesevaluationofantioxidantandanticancer activities of the obtained extracts. Extraction was carried out with aqueousethanol (80 %) at different material/solvent ratios, ultrasonic intensities and extraction times.The ultrasound extract with the highest yield of polyphenols from peanut skin (167.46 mg gallic acid equivalent (GAE)/g dry matter) was obtained using material/solvent ratio of 1/20 (w/v) with ultrasound intensity of 0.10 W/cm² for 20 min.Meanwhile,themaximumyieldofpolyphenolsfromnon-roastedsesamecoat was 7.23 mg GAE/g dry matter.It was obtained with material/solvent ratioof 1/20 (w/v) using an ultrasonic intensity of 0.22 W/cm² for 40 min. HPLC of the peanut skin extract indicated that the main identified polyphenols were catechin, syringic acid and vanillic acid. HPLC analysis of the dried sesame coat extract revealedthe presence of sesamin and sesamolin at 65.967 and 38.737 mg/g dried extract, respectively. Catechin, p-coumaric acid, and chlorogenic acid were the most abundant polyphenols in this extract.The antioxidant and cytotoxicity activitiesof the investigated extracts with the highest polyphenols content were studied. The extractsofpeanutskinandsesamecoatshowedremarkableantioxidantactivityon DPPH (IC₅₀ = 30.50 and 81.01 og GAE/ml, respectively), and reducing power (IC₅₀=17.51 and 199.22 og GAE/ml, respectively)
