Abstract A total 120 samples of milk &some dairy product served at Assiut University hospitals (UHT milk, Feta cheese, processed cheese and yoghurt) as 30 eachwere collected randomly and examined for evaluation of Microbiological quality. The average APC were 4.47 x 104cfu/g, 3.02x104cfu/g and 3.85x104cfu/g of the examined UHT milk, soft cheese and processed cheese samples, respectively. 3.33% of the processed cheese samples had coliforms count more than the required by Egyptian standard (not more than 10/g), while 93.33 of the processed cheese and all the examined UHT milk, yogurt and Feta cheese samples were compatible with the Egyptian standard. All of UHT milk, yoghurt, Feta cheese andprocessed cheese samples had fecal coliforms and E. coli count below 3/g.B. cereus were detected in 6.67%, 6.67%,73.33%, 80% of the examined UHT milk, yogurt , Feta cheese and processed cheese samples, respectively.Staph.aureus existed in 40% of the examined yogurt,13.33% of the examined Feta cheese and in 56.67% of the examined processed cheese samples,while all UHT milk samples were free.The average yeasts and molds count were7.7X103, 2.3X104, 1.3 X104 and 4.5 X104of the examined UHT milk, Fetacheese and processed cheese samples, respectively. |
