Abstract
THe Present study aimed to evaluate the production of L-asparaginase from some soil isolated fungi and select the most producing fungal species to l-asparaginase. study the optimizing factors for L-asparaginase to carry out medical application as antitumor,biotechnological applications as food proccessing aid to reduce acrylamide formation in fried potatoes and also use L-asparaginase as antioxidants.
