Abstract

Street vended foods (street foods) are defined as those ready-to-eat foods and beverages prepared or sold by vendors and hawkers in the streets and other public places for immediate consumption or consumption at a later time without further processing or preparation.
A total of 135 random samples of ready to eat street vended foods represented by kofta, hawawshi and liver sandwiches (45 of each) were collected from Benha city, Tukh center and Moshtohor village (15 of each product) in Kalyobia governorate. The collected samples were examined for determination of some heavy metals as cadmium, lead and copper levels on the basis of wet weight (mg/Kg), Four biogenic amines including histamine, tyramine, putrescine and cadaverine as well as estimation of Aldrin and malathion as pesticides.
The obtained results revealed that the mean values of cadmium in the kofta samples were 0.09 ± 0.01, 0.13 ± 0.01 and 0.19 ± 0.01 mg/kg in Benha, Tukh and Moshtohor village, respectively. The average concentrations of cadmium in hawawshi samples were 0.17 ± 0.01, 0.25 ± 0.01 and 0.28 ± 0.01 mg/kg in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of cadmium in liver samples were 0.26 ± 0.01, 0.37 ± 0.02 and 0.43 ±0.02 mg/kg in Benha city, Tukh center and Moshtohor village, respectively. Furthermore, in Benha city, the percentage of unaccepted samples were 13.33, 13.33 and 20.00 % in the kofta, hawawshi and liver samples, respectively. In Tukh center, the percentage of unaccepted samples were 20.00, 26.67 and 33.33 % in the kofta, hawawshi and liver samples, respectively. In Moshtohor village, the percentage of unaccepted samples were 20.00, 33.33 and 46.67 % in the kofta, hawawshi and liver samples, respectively.
The average concentrations of lead in the kofta samples were 0.21±0.01, 0.16 ±0.01 and 0.10 ±0.01mg/kg in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of lead in hawawshi samples were 0.39 ± 0.01, 0.31 ± 0.01 and 0.24 ± 0.01 mg/kg in Benha city, Tukh center and Moshtohor villge, respectively. The average concentrations of lead in liver samples were 0.58 ± 0.02, 0.42 ±0.01 and 0.29 ± 0.01 mg/kg in Benha city, Tukh center and Moshtohor village, respectively. In addition, in Benha city, the percentages of unaccepted samples were 26.67, 13.33 and 6.67 % in the kofta, hawawshi and liver samples, respectively. In Tukh center, the percentages of unaccepted samples were 40.00, 20.00 and 13.33 % in the kofta, hawawshi and liver samples, respectively. In Moshtohor village, the percentages of unaccepted samples were 46.67, 33.33 and 26.67 % in the kofta, hawawshi and liver samples, respectively.
The mean values of copper in the kofta samples were 1.26 ± 0.11, 1.09 ± 0.10 and 1.53 ± 0.17 mg/kg in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of copper in hawawshi samples were 1.72 ±0.15, 1.48±0.12 and 2.37 ± 0.21 mg/kg in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of copper in liver samples were 3.68 ±0.22, 4.05 ±0.31 and 3.12 ±0.28 mg/kg in Benha city, Tukh center and Moshtohor village, respectively. Accordingly, in Benha city, Tukh center and Moshtohor village all samples of kofta, hawawshi and liver were accepted.
The average concentrations of histamine in the kofta samples were 12.57 ±2.08, 17.32±2.91 and 24.19 ± 3.56 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of histamine in hawawshi samples were 16.96 ± 2.72, 22.06 ± 3.24 and 27.75 ± 3.93 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of histamine in liver samples were 6.28 ± 1.35, 9.89 ± 1.67 and 11.04 ± 1.80 mg % in Benha city, Tukh center and Moshtohor village, respectively. Furthermore, in Benha city, the percentages of unaccepted samples were 13.33 and 20.00 % in the kofta and hawawshi, while all liver samples were accepted. In Tukh center, the percentages of unaccepted samples were 26.67, 40.00 and 6.67 % in the kofta, hawawshi and liver samples, respectively. In Moshtohor village, the percentages of unaccepted samples were 24.44, 35.56 and 4.44 % in the kofta, hawawshi and liver samples, respectively.
The average concentrations of tyramine in the kofta samples were 19.21 ±2.85, 24.17 ±2.91 and 31.02 ±3.34 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of tyramine in hawawshi samples were 27.59 ±3.31, 31.91 ± 3.62 and 38.86 ± 4.11 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of tyramine in liver samples were 10.64 ± 1.18, 12.75 ± 1.16 and 15.29 ± 1.76 mg % in Benha city, Tukh center and Moshtohor village, respectively. Thus, in Benha city, the percentages of unaccepted samples were 26.67, 33.33 and 6.67 % in the kofta, hawawshi and liver samples, respectively. In Tukh center, the percentages of unaccepted samples were 26.67, 40.00 and 6.67 % in the kofta, hawawshi and liver samples, respectively. In Moshtohor village, the percentages of unaccepted samples were 46.67, 60.00 and 20.00 % in the kofta, hawawshi and liver samples, respectively.
The average concentrations of putrescine in the kofta samples were 8.33 ± 0.91, 11.52 ± 1.36 and 15.07 ±1.72 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of putrescine in hawawshi samples were 13.75 ±1.46, 17.40 ± 2.01 and 22.58 ± 3.19 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of putrescine in liver samples were 4.29 ±0.57, 7.16 ± 0.83 and 9.41 ± 1.26 mg % in Benha city, Tukh center and Moshtohor village, respectively. Moreover, in Benha city, all kofta and liver samples were accepted, while the percentages of unaccepted samples of hawawshi were 20.00 %. In Tukh center, the percentages of unaccepted samples were 6.67 and 40.00 % in the kofta and hawawshi, respectively, while all liver samples were accepted. In Moshtohor village, the percentages of unaccepted samples were 20.00, 53.33 and 6.67% in the kofta, hawawshi and liver samples, respectively.
The mean values of cadaverine in the kofta samples were 5.82 ± 0.76, 8.14±1.25 and 10.54 ±1.31 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of cadaverine in hawawshi samples were 9.53 ± 1.12, 11.95 ±1.66 and 16.27 ±1.98 mg % in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of cadaverine in liver samples were 3.09 ± 0.40, 3.88 ± 0.71 and 5.69 ±1.03 mg % in Benha city, Tukh center and Moshtohor village, respectively. In addition, in Benha city the percentages of unaccepted samples were 46.67, 73.33 and 26.67 % in the kofta, hawawshi and liver samples, respectively. In Tukh center they were 60.00, 80.00 and 33.33 % in the kofta, hawawshi and liver samples, respectively. Whereas in Moshtohor village they were 66.67, 80.00 and 40.00 % in the kofta, hawawshi and liver samples, respectively.
The average concentrations of aldrin in the kofta samples were 131.15±16.72, 167.83 ± 17.44 and 184.49 ± 20.28 ppb in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of aldrin in hawawshi samples were 189.64 ± 19.03, 202.36 ± 24.17 and 225.86±19.71 ppb in Benha city, Tukh center and Moshtohor village, respectively. The average concentrations of aldrin in liver samples were 206.28 ± 21.50, 241.92 ± 28.63 and 298.04 ± 32.59 ppb in Benha city, Tukh center and Moshtohor village, respectively. Furthermore, in Benha city, the percentages of unaccepted samples were 6.67, 6.67 and 13.33 % in the kofta, hawawshi and liver samples, respectively. In Tukh center, the percentages of unaccepted samples were 6.67, 13.33 and 20.00 % in the kofta, hawawshi and liver samples, respectively. In Moshtohor village, the percentages of unaccepted samples were 13.33, 13.33 and 20.00 % in the kofta, hawawshi and liver samples, respectively.
