Abstract

A total of 120 random samples (250g) of beef meat (60 samples from each fore quarter and hind quarter) were collected from different butcher’s shops at AL-Behira province, for microbiological examination.
The result reveals that:
1. Total aerobic bacterial counts:
Statistical analytical results of the total aerobic bacterial counts from fore and hind quarters meat samples of beef carcasses were ranged from 1.2x104 to 3.1x106 and 2.6x104 to 4.5x106 cfu/g respectively. With the means values of 6.2x105±1.1x105 cfu/g and 1.03x106±0.17x106 cfu/g respectively. Also there is a significant difference between the mean values of total aerobic bacterial count in fore and hind quarters of meat samples in beef cattle carcasses p<0.05.
2. The total psychrotrophic count:
the total psychrotrophic count from fore and hind quarters meat samples of beef carcasses were ranged from 1.1x104 to 2.3x106 cfu/g and 1.8x104 to 3.7x106 cfu/g respectively. With means values of 4.6x105±0.9x105 cfu/g and 7.7x105±1.3x105 cfu/g respectively. There is no significant difference between the mean values of total psychrotrophic count in fore and hind quarters meat samples of beef carcasses p≥0.05.
3. Total Enterobacteriaceae count:
the total Enterobacteriaceae counts in fore and hind quarter’s meat samples of beef carcasses were ranged from 2.5x103 to 6.8x104 cfu/g and 3.5x103 to 7.3x104 cfu/g respectively. With the means values were 2.8x104±2.8x103 cfu/g and 3.9x104±3.2x103 cfu/g respectively. Also there is a significant difference between the mean values of Enterobacteriaceae count in fore and hind quarters of meat samples in beef cattle carcasses p<0.05.
4. Total coliform count:
The total Coliform counts of fore and hind quarters of meat samples of beef carcasses were ranged from 1.1x103 to 4.6x104 cfu/g and 2.0x103 to 1.1x105 cfu/g respectively. With the means values of 1.3x104±1.7x103 cfu/g and 1.9x104±2.7x103 cfu/g respectively. Also there is a significant difference between the mean values of Coliform count in fore and hind quarters of meat samples in beef cattle carcasses p<0.05.
5. Total Staphylococcal count:
the total Staphylococcal counts of fore and hind quarters meat samples from beef carcasses were ranged from 1.2x102 to 3.2x103 cfu/g and 1.3x102 to 1.8x104 cfu/g respectively. With the means values were 1.3x103±0.99x102 cfu/g and 2.3x103±0.39x103 cfu/g respectively. Also there is significant difference between the mean values of total staphylococcal count in fore and hind quarters of meat samples in beef cattle carcasses p<0.05.
6. Detection of Salmonella:
In this study salmonella spp could not be isolated from fore and hind quarters meat samples of beef carcasses.
7. Total mould count:
The total mould counts of fore and hind quarters meat samples of beef carcasses were ranged from 2.5x102 to4.6x104 cfu/g and 2.6x102 to 6.2x104 cfu/g respectively. With means values of 7.5x103±1.3x103 cfu/g and 1.4x104±2.3x103 cfu/g respectively. Also there is significant difference between the mean values of total mould count in fore and hind quarters of meat samples in beef cattle carcasses p<0.05.
8. Total Yeast count:
the total yeast count of fore and hind quarters meat samples of beef carcasses were ranged from 1.1x102 to4.1x103 cfu/g and 1.2x102 to 4.2x103 cfu/g respectively.with means values of 1.1x103±1.4x102 and 1.6x103±1.6x102 cfu/g respectively. Also there is a significant difference between the mean values of total yeast count in fore and hind quarters of meat samples in beef cattle carcasses p<0.05.
