Abstract
Studies on isolation and characterization of novel yeast strains obtained from different sources such as : fruits , juices and paste . Than evaluation of these new isolates versus reference strains. Moreover the study investigates the fermentation conditions that lead to hihg growth rates and biomass yield because of economic growth media and scaling up of the desired fermentation processes.
