Abstract A total of 100 dairy products including small scale yoghurt and Domiati cheese (50 of each) were randomly collected from different localities in Beni-Suef city, Egypt. The mean values of titratable acidity, total coliforms, faecal coliforms, E.coli, Staphylococcus aureus and total yeast & moulds counts in small scale yoghurt were 0.76 ± 0.018%, 2.47x102 ± 5.69x10, 1.91x102 ± 5.15x10, 9.29x10 ± 3.75x10, 1.73x104 ± 5.02x103 and 1.55x104 ± 8.68x103, respectively. While the mean values of titratable acidity, salt, total bacterial count, total coliforms, faecal coliforms, E.coli, Staphylococcus aureus and Total yeast & moulds counts in Domiati cheese were 1.08 ± 0.06 %, 5.88 ± 0.24 %, 7.55x104 ± 1.9x104 , 3.55x102 ± 6.24x10, 2.22x102 ± 5.27x10 , 2.11x102 ± 5.64x10, 2.79x104 ± 8.73x103 and 6.52x104 ± 2.11x104/gm., respectively. Investigating the antibacterial activity of probiotic strains either as whole colonies or using its products (bacteriocins) against food borne pathogens (Staph.aureus, E.coli O157 and L.monocytogens) was assessed. Investigating the effect of probiotic strains on quality of yoghurt and Domiati cheese regarding to its effect on physical, chemical and microbiological characters specifically against Staph.aureus, E.coli O157 and L.monocytogens was assessed. Assessment the adhesion ability of probiotic strains (Lactobacillus plantarum strains) to Caco-2 cells as intestinal epithelium model in vitro.
