Abstract The present study was carried out to investigate theproduction of natural sweeteners (FOS) from artichoke and onion on carbohydrate and lipid metabolism in male albino rats fed supplemented diets containing FOS g/kg for 8 weeks feeding period. Chemical analysis of dried artichoke and onion indicated that the carbohydrate, protein and lipid were (83.4, 90.3% and and 1.61, 1.74% (g/IOOg DM), respectively). The increase in carbohydrates and proteins contents was observed in onion than that of artichoke. The artichoke lipids content lower than that of onion. |
