Abstract
A total of 200 random soft cheese, yoghurt and laban raib samples (100 of soft cheese, 50 of yoghurt and 50 of laban raib) were collected from groceries and supermarkets of different sanitation levels, at Sharkia governorate then transferred to the laboratory with minimum of delay to be examined for presence of mould genera, Aspergillus groups.
Economic importance and public health significance of isolated moulds as well as recommendations concerned with processing, handling, storage and transportation. So we can observed that the best way to deal with the problem of mycotoxins mainly aflatoxin in milk and dairy products is to avoid contamination of milk through prevention of contamination of food stuffs consumed by dairy animal as well as prevention of fungal growth in the dairy products.
