Abstract

Fenugreek (Trigonella foenum-ppaecum L») family Leguminosae is an erect annual herb widely cultivated in Egypt.
The protein content of the seeds varies between 20 and 32^, it is believed to be a good supplement for cereals because of its high lysine and tryptophan con¬tent, whereas cysteine and methionine are only present to a low extent. Thus fenugreek can provide the essen¬tial amino acids which are known to be deficient in ce-
(1),(2) reals .
Fenugreek has been cultivated in the Mediterranean >a, in North Africa, in India, in Near East, and Abys¬sinia. The principal exporting countries include India, l^ance, Lebanon, Egypt and Argentina.
The annual production and planted area of fenugreek

flu Bgypt through 1961 to 1982 is given in Table I.
The planted area ranged between 16000 and 44000 and the production ranged from 80000 to 169000 ibes ( The ardabe = 155 Kg.).
